Brix is a measure of soluble solids content in grapes consisting mostly as sucrose. Brix is expressed in degrees using a refractometer. Each degree of Brix equals 1 gram of sugar per 100 grams of juice. Measuring is done at harvest and most table wines are harvested at between 19 and 25 Brix.
